Best type of wood to open fire cook over?

What is your preferred wood species to cook steaks over? I've used mostly pecan.

It doesn’t matter. You are grilling steaks above smoking temperatures and the type of wood is not going to affect flavor.

Try that with a piece of pine and get back to me.

Use what is local which around here is pecan or oak which I don’t care for unless it is down to coals.

Some wood burn hotter/longer than others, so yes it would matter.

This. You're only cooking a steak for a couple of minutes each side, so as long as it's your typical hardwood Oak, Cherry, Hickory, etc, it really doesn't matter how long it burns. It just matters that the fire is hot enough that it's not smoking. Obviously you're not going to cook over pine.

I burn mostly oak, with a touch of hickory and/or pecan to coals...then grill.

I forget there are morons in here who would actually think of using softwoods for cooking.

So you pick your wood based on the temperature at which it burns for grilling? Come on, I get you are going for the "well actually", but there is no difference for grilling. If you want to manipulate temperature, then manage airflow or the height of the meat.

I mostly burn mesquite. I'm not really a fan of oak.

Mesquite would probably work well. Burns hotter than other woods.

I would think the type of wood matters even when grilling. That being said, I typically use mesquite for grilling and post oak for smoking. That’s an interesting question about grilling wood making a difference or not.
