Best turkey brines?

What are some of your favorite brines?

I always use salt, peppercorns, orange peels, rosemary and brown sugar.

I'm going with Alton Brown's dry brine this year.

3.5 tablespoons kosher salt
1.5 teaspoons rubbed sage
1.5 teaspoons dried thyme
1.25 whole peppercorns
0.5 teaspoons all-spice

I do this, but up the salt, add candied ginger and wet brine it in a 50/50 mix of veggie stock and water.

Go with his sugar/salt wet brine, it can't be beat !



AB turkey brine


We use a propane air gas fryer and it comes out perfect every time. I have used the dry brine but it's not even close for overall flavor compared to the wet brine.

I've always been told a wet brine will make it harder to get that really crispy skin from the Big Easy that I love. Do you just pat dry and let sit uncovered in fridge the night before?
