I have put together a pretty nice set of Japanese Chiefs/Santoku/pairing/Gyoto style stuff but for steak knives I just have a cheap set of straight edge knives. They get abused by guests, but as long as it’s a straight edge I can keep them sharp by sharpening regularly. Serrated knives just tear the meat after a bit of use.

With that said, just get a straight edge set and keep them sharp.

Tojiro

I grabbed these Tojiros a while back. They are super sharp and are VG10 steel. I got mine a little cheaper than what these are but I did get them from this site

For the price you can't beat Messermeister Avanta. We have these for times we have guests over. We have a pair of Perceval 9.47 that my wife got me for an anniversary present but we only use them ourselves I ain't paying the price for more sets for bigger get-togethers.

these are the best; however, there are fakes out there, so you need to make sure you are buying from an official, reputable dealer.

Laguiole - great display box and ivory handles look sharp

I'm sure there are better ones out there but can't go wrong with my Laguiole

I bought a set of Percival knives after using them in a few restaurants. They are made in France and they make a variety of really cool knives.

This is an unorthodox approach, but I was at my brother's place over the summer and cooked a nice thick ribeye. He has all sorts of knives but not really any set, so I found a Misen paring knife, and it worked better on that steak than any steak knife I remember using.

They have steak knives as well, but I don't like using a serrated knife on anything but bread.
