Dear Friend,

There is but one place I buy my fresh oysters: P & J Oysters on Toulouse. They are only open in the mornings and I think they only sell half sacks now. They tried selling them shucked, but I'm not sure they sell them shucked or not anymore.

I try to get there before 7 to beat the traffic and to get the best choice. I hope you find them to be as wonderful as I do.

Sincerely,
TulaneLSU

I’m nearly certain I bought some shucked from Langensteins uptown right before Xmas. They were good.

P&J most definitely. They sell shucked or unshucked. I normally buy a gallon of shucked. Prices have gone up a lot.

What frustrates me about buying shucked oysters is there seems to be no standards as what constitutes a gallon/quart/etc of oysters. Several years ago I tried to find out what the standard weight was...I was told all kinds of BS. I contacted "officials' in Louisiana, Mississippi and Alabama. I didn't necessarily expect the three states to agree, but officials in each state couldn't agree with themselves. Right now it's seems to me it's whatever the retailer can get away with. Buyer beware!! That being said, P&J is where I would go in N.O....if for no other reason...freshness.

Schaefer's in Bucktown for shucked or sacks/half-sacks.

Never had any shucked oyster container from P&J's that wasn't absolutely filled to the brim with oysters and very little water/brine.

Most (maybe not all) oyster processers will use an air compressor and blow air into the container to plump up the oysters. Years ago a gallon of shucked oysters was 8 lbs. no more..
