Best place to source a whole beef tenderloin in Baton Rouge

Probably looking for choice, maybe prime if price is right. Looking for best combination of quality and price.

Costco will definitely have it, but just know that they blade tenderize all their meat.

If price is at all a factor then Costco for sure. It’s the place to “source” whole subprimals.

Costco or Maxwells Market. Costco doesn't blade tenderize all their meat, especially if it's cryovac'd. The only cut I recall being blade tenderized was the spinalis.

Nope. It’s pretty much all blade tenderized. Even the Prime. We’d Tenderloin. Brisket is hot or miss, but if you get the cryovac it should be fine. You can request it from the back. I’ll grab a pic of their label next time I’m there.

I’ve never seen it sold outside the cryovac.

ETA: I have never seen brisket or whole sub-primals sold outside of the cryovac.

This is a good explanation of the process. It’s the same reason for the recommendation of not eating ground meat undercooked.

It will say "Blade Tenderized" on the label and have a recommendation that you cook it to 145 degrees if it is blade tenderized.

Costco doesn't have whole PSMOs they only have ones that are trimmed so they're more expensive but it's all yield. I would look at Sam's for a whole PSMO tenderloin.
