That's why I throw in a bag of ice. It stops the cooking process and I can soak them as long as I like.

I cut the heat as soon as it comes to a boil and they start to float. Let it sit for about 2 minutes then I put my whole pot in a sink of ice water to cool it. Stir the pot vigorously as soon as it goes in the ice. Let them soak in there for about 30 min.

Cook till they float, soak till they sink
I usually bring water to a rolling boil with extra seasoning vs when i cook crawfish, drop shrimp in, immediately cut fire, they will start floating shortly, add some ice and when they start to sink pull them out, they will continue to cook from the retained heat

Just stir the pot after adding the ice so the temp is consistent throughout the pot. Also spraying they outside of the pot with a hose helps.

Start watching them soak. U can see when the back seperates from the meat. Thats when you pull them and they will peel pefect
Recipe from a buddy that boils for a living. You will need atleast double your normal seasoning tho
