I've always used the Fiesta brand fajita seasoning and some lime/orange juice to get some acidity in the mix

Marinate in some soy sauce, beer, fresh lime juice, touch of sugar, sliced japanos, chopped cilantro, and some olive oil. Remove from marinade, pat dry, and sprinkle with kosher salt and pepper. Grill it.

Skirt, but it's hard to find these days (anyone have any good places to get it consistently)?

Because it's hard to find, lately I've been using a thin-cut sirloin that Rouses sells. Marinate for a few hours. Also, I've been exclusively doing them on the grill as of late. I basically cut the steak pieces in half, grill for a few minutes. While that's going on, I start cooking the onions and peppers in a grill pan. After a few min, I take off the steak pieces one by one, slice them on a cutting board, and then add them to the grill pan, and let them finish in there.

I do the same deal with chicken. I use boneless thighs and breasts. I like thigh meat for fajitas but the rest of the family only likes white meat (that's what she said).

Replace beer with pineapple juice, and that's pappasitos beef fajita marinade recipe. Though they use a vacuum tumbler to shorten the process.

How long do you marinate for? I assume don't pour the marinate in the bag before sealing? Just coat the meat and seal?
