Benny Hill Volume 3: Game time Gumbo

Started last Monday on advice from the board I (well the wife) took the heads and tails and some leftover junk from the fridge and boiled it for a while.
The result smelled like a garbage can 3 days after a crawfish boil. Ask me how I learned that one. Strange color too.
Gumbo started with a Roux. This time I took it to a dark brown. Picture doesn't do it justice.
Add in the trinity.
I threw 1/3 of the sausage in the pot to help season the gumbo and browned the other 2/3rds. Cause non browned sausage sucks.
Honestly the wife did most of the stuff after the roux so I got no pictures and have no idea what she did. She used 1/2 of the stock we made and half chicken stock. Boiled chicken thighs and shredded it and added some of the leftover crawfish we froze from the weekend before. Lets hope we didn't use up all of the Crawfish power last weekend. Final 4 game time!

Chicken and crawfish gumbo. Not a typical combo, but it sounds good.

We've done it before sans crawfish and it's good. But we had to find a way to incorporate our sweet 16/elite 8 crawfish for superstitious reasons. Rice should be done soon.

I just cant bring myself to do a chicken and sausage and seafood gumbo.

Looks good, but next time cancel the chicken and replace it with shrimp and oyster (or a catfish filet if you don't like oysters.)

The mixture of chicken and crawfish wasn't too bad. If anything the crawfish is lost and overpowered until you actually got a piece of crawfish. So not bad, more of a waste of good ingredients.
The mistake was the conecuh sausage the wife bought. Even after Browning and rendering most of it before adding to the pot it was just way too greasy. Probably should have browned and rendered all of it before adding to the pot.
