I agree - Monkish and Parish would be awesome. Monkish and Trillium collaborated on something a while back and it was delicious.
I also think it would be cool to see Abita collaborate with Grimm and do a sour.

As something different I'd like to see NOLA and The Veil do some sort of funk collaboration, though they have JK coming up for a taproom takeover next month.

Would love to see, but neither of them have any sort of canning/bottling capacity. It would have to be kegs only.
Maybe they have something planned for after GN opens their new facility.

Yeah, I just found it on instagram. Great Notion people were in New Orleans and they stopped at Courtyard. Apparently they brewed a beer together that is a Double IPA with oats, wheat, and hopped with Galaxy, Mosaic, Citra, Cashmere, and Denali. Then they plan on adding Pineapple and Coconut and will be tapped at Courtyard the second week of Jan.

Yeah, one of the Great Notion founders has Louisiana roots, I believe. I shared a couple of Parish brews with them last year.
