You can make it yourself if you can’t find any. Try a Rouses and see if they have any extra beef fat in the back. I have gotten some ribeye fat they were going to toss anyway and cooked it down.

Yeah that what I usually do. I'm trimming my brisket right now and I usually use these trimmings. But I saw a technique on a Meat Church video that used the pre-made stuff so I was gonna try and find some. Biggie if not my DYI method works just fine

Rochers butcher in Plaquemine. They have great bones and fat. We make a big round of stock and tallow after Christmas.
