I'd never be butt hurt over this. Just dealing with a couple people over the last couple days that bring absolutely nothing of substance to this, when all in trying to do is help people. I can stop at any time. Y'all just let me know.
Do you have any useful input on brisket?

I had a large drip pan full of water under mine. I’ve never wrapped with paper, either.

I spritz with apple juice. I can’t think of a way to improve it, but I’m all ears.

I'm not going to argue that you have a ton of experience and have your methods. Just saying that science could probably help you out.

For instance the belief that fat doesn't penetrate the meat because of molecules and blah blah blah. But, you neglect that fat isn't a element and is instead made up of different parts, that when released from the bond, can certainly penetrate meat. And when they penetrate they carry with them compounds you impart on them with smoke or seasoning.

I would. I don't doubt that they have their defense, just a different opinion. Not everyone can handle the added complications and problem solving that controlling a heat source brings. Kind of why the Big Green Egg and sous vide type devices have become so popular.

What I've done over the last few days is share some of my ideas, and what I think may help some people. I've also stated a few times that I'm not saying that what I'm doing is the end all be all of bbq. Just simply suggestions, but have had a few people tell me how wrong some of these things are without offering anything with substance. I havent toks anyone that what they were doing is wrong either. Everyone has their own style and techniques. I'm all for it, and probably have learned a couple things this week myself.

Btw....your brisket did look good, and what you're doing seems to be working for you as well.

I'm not a science guy, just a bbq guy. My thoughts are based off of my own experience and researching others that have done side by side comparisons of fat cap up or down based on where the heat source is. The results have usually been beneficial to use the fat cap as a barrier, or minimal difference. Can it be scientifically proven right or wrong? Possibly.

Ok. I admit it. Not sure I’d be able to get mine like that on my egg. I guess it’s just go with what ya know for what you have. If I did fat down, it’d be ruined. I did talk to a baw a few weeks ago who does his brisket fat down on this,

You might have met this guy at some point.

He’s right unfortunately, if this is why you are doing fat cap up, it doesn’t work. Fat cap up or down doesn’t have that big of an impact. If you have a heat source close to the meat, it does help to point the cap at it to give it more of an even temp.

I can’t remember which site went through all the science, think it was Amazingribs. The fat cap argument is old and tired and pointless.
