Not really... Some places offer pork (mainly sausage form), but they primary offering is beef. There are a lot more cows in Texas than pigs...

If you asked for a BBQ sandwich in MO, we'd ask you to specify. Usually it's either called chopped beef (brisket) or a pulled pork sandwich here. As you head west to KC you get more beef BBQ, especially burnt ends, and east to St. Louis you get a lot more pork products, especially pork steaks (which are the best way to eat pork).

I went on a BBQ tour in NC in September. I went along the BBQ trail. I was sadly underwhelmed. Red Bridges' tasted like the pork had been baked, not slow smoked. Herb's was ok. Lexington BBQ was bland. Went to a total of eight places and none were worth a second trip. I did though begin to appreciate the different takes on coleslaw. NC is a beautiful state, but it's BBQ can't come close to Texas' beef.

The Smoke Pit in Concord. I've eaten a lot of barbecue. They are head and shoulders above everyone within a 100 miles.

Thanks. I'll have to try it next year. I did a search while planning the trip but that never popped up even though I drove fairly close to it on my way to Salisbury.

You can find some of the best pork ribs around at the places in Lockhart.

But overall yes you are correct.
