Bakers: Evaporated milk vs. regular whole milk

It's the season for baking, so some recipes call for PET milk (evaporated milk) and others call for regular milk. Why should I use PET milk if I have whole milk in the fridge?

PET milk has half its liquid removed - hence the term evaporated - so it's more concentrated in flavor than regular milk. It can also withstand higher temperatures without curdling than whole milk.

To avoid buying a can of PET, simmer 2.25c whole milk down to 1c and use that in its place.

Evaporated milk is cooked and concentrated. It has less water and more milk solids/protein than fresh milk. The evaporation cooking changes some of the milks properties, making it more suitable for certain recipes......it is common in candymaking, where the lower water content is desirable.

It is also common in some older recipes bc it is shelf stable, ie, easy to keep on hand and be ready at a moments notice. Manufacturers of evap milk promote their products via recipes, so they’ve employed a battalion of cooks and home economists over decades to create recipes using canned milks.

I enjoy evaporated milk and now that you posted to make it at home I was curious about the taste of homemade vs. Canned? by simmering milk down does it taste similar to canned or different?

Sorry for the delay in responding. I think there's a difference in taste, but not so much that it would affect a recipe.

I don't know the science behind it but my bread pudding comes out a lot better with PET milk

I wonder if it's because it's already at room temperature
