Bacon grease: how long can I keep it?

Does it need to be refrigerated?

I'm sure there's some FDA approved time and they'll probably need to say it should be refrigerated, but my grandma just had a jar next to the stove she'd always add bacon grease too. Never saw her change it out. Food was always delicious. Never got food poisening, so....

I’ve always heard that if you thoroughly strain it then it’s practically indefinite.

seems like my dad kept some in a cast iron skillet at all times when I was a kid and some in a mason jar. He made bacon and fried eggs every am

It will go rancid if not perfectly clear unless refrigerated. I refrigerate because it doesn’t really matter.

But if your grandma, like mine never did, it stayed good because they were constantly using it and adding more. Rotating the stock.

I've had a jar next to my stove for about 3 years now and I've never encountered a problem. Probably add/remove from it once a month.

My dad keeps his in a coffee can beside the stove, but that has always made me nervous. Mine is in a jar the fridge.

I add to it constantly, but I really like my bacon grease to be clear, so I microwave and strain the contents of the jar every few months.

If you want it perfectly clear buy a rack to fit into a baking sheet that is raised-a cookie cooling rack.

Put aluminum foil on the baking sheet that has a raised rim and bake the bacon in the oven at 350 for about 25 minutes or lower and slower than that. It renders perfectly clear and white lard as well as not shrinking the bacon. It just takes a little more time but the bacon being raised allow just the fat to drop not the pieces of bacon. Then you can use it to make biscuits.
