Anyone here use shrubs in their drinks?

Got introduced to them at Meauxbar as an addition to mimosas, but i'm seeing them in stores now. Any way these actually enhance the flavor of drinks? I'm a bourbon / splash of water drinker, any suggestions on which ones would be good additions? We thought it was hokey so I'm not really expecting much.
Here're some store bought, I think Meauxbar's were house made.

That's a fairly forgiving shrub, may even smell better after your encounter.

Yes it is. Friend hit the holly bush once. Yeah that didn't work out too well.

To be honest, I don't really have a problem
getting down bourbon drinks as it is. Probably best I don't try to make them more appealing.

Tried a few drinks made with them and I'm not particularly a fan. While it can be interesting to change up the acid note in some drinks I've yet to find an application for a shrub where another source of tartness would be more pleasing. For me there just doesn't seem to be a time when I say, "this drink needs more vinegar".
Acid phosphates though - now there is an interesting thing to play with in drinks.
