Anyone here slow roast tomatoes? (Pics inside)

I took four pounds Romas split long ways. Minced six cloves garlic , combined with five tablespoons of olive oil and drizzled over each tomato half. Seasoned with kosher salt and fresh ground pepper. Half i topped with finely chopped fresh basil. Into the oven at 200 degrees for eight hours. Incredible flavor . Tastes like a less sweet and juicier sun dried tomato.

I roast them, but at about 400. Delicious. I puree them for roasted tomato soup, but I've used them in salads and on pizza, as well.

Toss with pasta, use for bruschetta, on a grilled cheese sandwich, to jazz up mac and cheese, on a cheese plate, etc

How long at 400? I did some this weekend for the tomato sauce for a sauce piquant. I roasted them at 275 for two hours with whole garlic , onion and sprigs of thyme.

Those look nice!!

I eyeball them when I roast. I think you can go either way with them-slow roast or higher heat. With higher heat, you have to watch them more closely. I like a good bit of caramelization.

Try with a little vinegar on them next time. White balsamic is very nice.

I used shitty grocery store Roma’s for the eight outr ones . For the sauce I used some pretty heirlooms
