Anyone here make Prudhomme's Egg and Dried Shrimp Gumbo?

I was looking to make something new and came across this recipe. Ive never cooked with them, but, it seems like it could end up being overly salty with all of those dried shrimp included. How did yours turn out and did you make any modifications?

Not gumbo, but my Mom use to made a dish with ground beef, onions, peppers and dried shrimp in a tomato sauce that was pretty good.

I would think you'd need to parboil the shrimp a bit in plain water to remove some of the salt from the dried shrimp.


I use to make them many, many years ago by salting the smaller shrimp and tossing them on a tin roof and spread out, then covered with a suspended fine mesh net so birds couldn't get to them.

I haven’t made that specific gumbo, but it’s easy enough to taste the dried shrimp before using and see how salty they are, you can rinse in water before using to tame the salt if needed.

Do dried shrimp carry much of a flavor? That recipient seems like it would a little bland

Dried shrimp are intense. You can buy little packets of powdered dried shrimp to boost the seafood flavor of a gumbo if you don’t have stock, or you are short on actual seafood to put in it.

Dried shrimp and potato stew is delicious, and a few tossed into a pot of white beans is a tasty improvement. They’re also good in stewed okra and tomatoes.

Look to Thai cooking for a bunch of dried shrimp uses. Salads, etc.

Made a stock once from dried shrimp and it stunk up the kitchen. I suggest to cook it outside.

I live in central MS, would my local Kroger carry them? If so, which aisle should I start looking?

Hmm, dunno if you’ll find them at Kroger. They’re everywhere in south LA. Walmart stocks them at the end of the frozen foods aisle in my hood, in the little few ounce cello bags stapled to a big hanging card display.

If you can't find them at your regular grocery, try an Asian market. I think the Asians actually showed the Cajuns how to dry them.

They even sell them on Amazon. I even saw lower salt versions on there.

I made the gumbo and just finished some for dinner. I used one cup of Pop's Golden Gems dried shrimp which is quarter cup more than the recipe called for. It turns out they did not lend much flavor to the gumbo. Luckily I also added three gumbo crabs to the pot after I used them to make the stock. The gumbo came out pretty good with an obvious crab flavor. I also added a bit more seasoning to the recipe as what Prudhomme called for was unusually timid for him.

Dried shrimp are awesome and sadly have been neglected for a generation. I remember when every checkout counter had packages of dried shrimp hanging next to the lip chap

It’s not some exotic gross ingredient. Doesn’t even have a strong flavor. It’s basically beef jerky but made of shrimp... so even better.

I haven’t tried this particular recipe but it seems old school asf and something your parents for sure would know and enjoy
