boil a slab in salty water and crab boil, not too long tho. Take it out and cool it quickly. Separate with a fork, makes great imitation crab meat

Redfish is great for tacos. No recipe, just throwing that idea out there.

If you hadn’t tried it, don’t knock it,,,,it makes a crab au gratin that you can’t tell the difference between that and real crab.

Got this recipe on the Outdoor Board some years ago for grilling redfish on the halfshell it's really good:

Season fish however you like - we use Tony's and garlic powder
Spread mayo on top of fish, then sprinkle a layer of parmesan cheese. Top with sliced scallions. Add thin cut lemon slices on top of fish. Put a small pat of butter on top of each lemon slice. Put on grill and cook until done - time will depend on size of redfish. Remove lemon slices and enjoy.

I use red snapper, but redfish would work great.

“Boston911” should have been a hint for us to not take seriously their seafood cooking advice.

Conventional Seafood Cooking in New England has all of the pizzazz of a cheap roll of toilet paper.

I’ve only done a redfish courtbillion once and was impressed how it came out following John folse’s recipe.

Not sure what you mean by a sauce based redfish recipe but I made this the other night with Black Drum and it turned out great.

Slice the fish into filets
Season with a blackened seasoning. I used Paul Prudhomme's Blackened Redfish Magic
Heat up a skillet on high with some grapeseed oil
Grill for about 3/4 minutes on each side till you get the crispiness you want
Microwave half a stick of butter/juices from half of a lemon/fresh parsley and put sauce on top of fish

Take a nice piece of blackened redfish and put it over an Alfredo sauce with pasta.

I generally do this with my leftover blackened redfish. You can also add crabmeat and shrimp into the mix if you want but it's not necessary

I like it fried with a lemon, butter garlic sauce. In tacos, in a court bouillon, baked with some onions and lemon. Redfish is a very versatile fish.

I think people from Massachusetts normally know a thing or two about cooking seafood.
