Anyone have a go to recipe for the instant pot?

I bought one on sale friday and I'm just wondering if anyone has a solid go to recipe they have used before. TIA

You can do any recipe you would normally do when you make a pot of something. It just cooks it faster

Havent been using it lately but I do like doing veggie dishes in it.
Chicken for tacos was very easy and good.

Some of what I've cooked since I had it, some multiple times:
Red Beans and Rice
White Beans
Field peas
Greens
Chili
Chicken thighs
A deer roast
Beef short ribs
I haven't really changed any recipe from what I normally do, just hit the appropriate pressure cook button at the point where I would normally set in to a low and slow cook. I did use a recipe I googled for instapot chicken thighs. The thing has a sautée button. Use that to start off browning your meat. Remove meat, add trinity or whatever to sautee then put everything back in. Just like you would a regular pot. The difference is hitting a button to pressure cook and being done in an hour as opposed to several hours.
I doesn't take the place of or outdo a black pot but it comes in handy.

I really like the turkey and black bean chili from Dad Cooks Dinner blog. Recipe
I've made it twice (left out the 2 sweet ingredients), and it was really good.
Here's a simple one I picked up somewhere:
Chicken Tinga
3 boneless-skinless chicken breasts
Salt & Pepper
Cumin
Jar of Herdez Tomatillo Verde Cooking Sauce
Dry brine the chicken with S&P and cumin for an hour or so.
Put chicken in Instant Pot and add about 4 spoonfuls of cooking sauce. Some add ½ cup water, but I think it's not necessary as the chicken seems to produce liquid.
Manual under pressure for 20 minutes, then natural release for 5 to 10 minutes.
Shred chicken with forks. Stir in more cooking sauce to taste. I used the rest of a 12 oz. jar.
Use to make tacos, burritos, etc.

I've been on the fence about purchasing one. I guess this wouldn't be the best for keeping the meat whole? Portioning out one chicken thigh for dinner, for example. I'm guessing they entire thing will be too tender to keep together.

I bought the America's Test Kitchen cookbook for pressure cookers. Everything has been phenomenal. I recommend it, for sure.
My go to is shredded chicken for tacos.
4 chicken breasts, 1 packet taco seasoning (or add your own cumin, garlic powder and chili powder), 1 can of rotel and about half a can of water. Put under high pressure for 10-12 minutes or until chicken is cooked. Shred chicken and mix everything together well. Turn on heat to cook off excess liquid if necessary.
