Anyone ever done a small 3lb brisket on the smoker?

Hi all. Been browsing several threads about smoking brisket. I have a small 3.5lb brisket that I'd like to smoke.

Should I follow the same method as the big ones? I'm assuming the cook time will be very different for such a small one. Should I wrap? Just cook straight through on the grill?

It's just labeled as timed brisket.

I don't fire the smoker up and baby sit it for hours on end for anything less than 10 pounds of meat. To each their own though. If it were me I would braise it for barbacoa

I will, just plan other things and stage chicken, hamburgers and sausages along the way.

You can easily tell if it's just the flat or the whole brisket. At 3 lbs. it has to be just the flat or it came from the smallest cow in the history of cowkind.

Honestly Lou that is a better canidate for the slow cooker IMHO.

I've done it with small ones that had both some flat and point. It doesn't take long for it to hit 165. To get it up to 195 takes another few hours and during that time the flat begins to dry out. I don't wrap it to get past the stall. With a small one I probably should. That obviously would allow to remain moister. It's not the best, but if you're in the mood for barbecue, it's going to be better than any restaurant brisket you'll find in LA.

you can do it, but Inject the shite out of it.

And, make sure you are using a temp probe. It will hit the leather stage FAST.

I've attempted a few, and as others said, I would go another route.

I do it all the time. The grocery store by my camp sells little 2-4 pound brisket points. Theyre just cheapo Select cuts but they turn out really good. Smoke for a couple hours then wrap in foil or foil pan with a little water for a couple more hours. Makes awesome shredded brisket for tacos or sandwiches and you get some some flavor.

225 to 250

I’ve done it, but I always just make burnt ends out of the whole thing instead of slicing or pulling.

Should I wrap it at around 160 then out it back on? Or just let it go to around 200 then wrap and put into cooler?
