I just got to cooking on my Weber Kettle and have done a little off set grilling and was watching a video of this guy grilling wings using off set method but with this thing called a Vortex.

I have just been using the regular grates that came with grill (which are great btw). Has anybody tried this method? I am now seeing a lot of youtube videos of people using this tool.

Ok. Two things.

First and foremost, consider this.

LINK /

I have one and I love it. Gives you perfect heat control when using a weber kettle. In fact, if you only get one thing for a kettle, get this. You won't need something like the vortex to avoid scorching or burning.

And secondly, this.

You want to slow smoke? Done. You want to sear or high heat/off set roast? Done.

I used to use the two Weber grates in the middle and place my wings around the outer edge just like that.

However, I got a slow n sear 2.0 for Christmas and it’s been a total game changer. I’ve only used it twice but both times had amazing results. Good bark on pork and crispy skin on wings.

Pulled pork

Smoked chicken wings

I use one on a lot of my kettle cooks. It gets stupid hot and disperses the heat well without burning things like chicken wings. I’m digging corn starch coated wings right now.

Slow N Sear also concentrates the heat to one side, instead of the middle. The SNS gives you about 2/3 of your grill space for large items, like a pork butt (no more stacking charcoals for the snake). It gives you about 1/3 of the grill for high temp searing. I love it. Got a pork butt on right now...

Also, the SNS has a water reservoir to add moisture and regulate temps for long, slow cooks.

Their are probably videos comparing the Vortex to the SNS, but I think the main advantage of the Vortex might be wings.

I made one out of a metal dog bowl that I cut the bottom out of. Probably cost $5 or so. Works great for wings. I do like it better for wings than the Weber baskets - just a touch easier to use and gives me a bit more room to cook indirectly.

If you like to smoke on the kettle, probably SNS is better. On other thing that I have for longer cooks is the DigiQ. That allows me to set the temp and it maintains it for you. It works great, but after the SNS, DigiQ, and Pizza Kettle, my cheap kettle ain't so cheap. But I I can cook virtually anything...

Yeah but I think what the dog bowl guy is doing is a good, low class way of making a vortex. I'm gonna do that.

I do what you do for other applications.

That’s a great idea. The vortex itself is something stupid like $60.

Yea. The grilling hobbie has gotten too trendy. Now most of the accessories are stupid expensive. This is a great example. This is a $30 tool. Slow 'n' sear is another example. That's a $50 tool, not $100.

How did you cut the bottom out of the dog bowl?

I got one and love it for wings. Don't really use it for much else. But for wings, it is perfect. I fill it up, place the wings around it, put a piece of smoke wood on the grate over the vortex and then rotate the lid on the weber every 10 minutes until they are done. Usually takes about 40 to 50 minutes and they are nice and crispy.

It's great for wings, but is great for smoking too. You can also get your grill super hot for searing anything. It's well worth the money.

If I had to guess, drill a couple holes and then use a reciprocating saw?
