I did for only 9 months and let me tell you... no, that does not surprise me or even disgust me in the least. This was at a kitchen where the manager actually cared and harped on station cleanliness and sanitation, no less.

i have worked in restaurants but not the kitchen

although it's irrelevant to a discussion about coking videos, as i explained previously

I wash my hands often, but I'm not anal about everything. I finally realized that no matter how careful I am, there is going to be some cross-contamination.

Taking chicken out of the packaging. The juices get on the countertop, sink, floor, etc. There is no way to clean everything, every time. When I put chicken in a ziploc bag to marinate, I know there is chicken juice on the outside of the bag. I may rinse it off, but I don't disinfect it. I wash my hands.

If an item is going in the dish to be cooked, I'm not worried about it. If the chicken is going to be in the same pot as the chicken, who cares if I touch it after touching the chicken?

I'm always really careful about food handling. I think e lot of cross contamination can be avoided with prep. I'll portion out salt, pepper, and other spices before I even take the meat out. That way I'm not touching raw meat and then a pepper mill or something like that. As soon as I'm done handling raw meat I wash my hands and anything else that touched it like a knife.

I'm sure I don't do a completely perfect job but I'm very mindful and try to think about what I need to do before I do it. Makes things more efficient.
