Personally, I like Ziegler's souse just fine, and you can get it at most any Piggly Wiggly.
There are some recipes on the internet to make your own. Probably not hard to do if you have a pressure cooker.

Souse meat and hog head cheese is not the same. Souse meat is picked in vinegar

Best I can describe is like what HoboDickCheese said. It’s meat jello. I’ve never made it myself, but from what I understand, you boil the whole head and add a gelatin to a mix of the fat, meat, and collagen that are boiled out of the head and put it in a loaf pan and let it solidify. It doesn’t contain any actual cheese.
Put it in a cracker and enjoy. I like it, but don’t eat it very often due to it usually being too salty for my taste.
