Could possibly be machine cut meat as well. One of the companies I've worked for (don't know if they're still doing it or not so not going to put them on blast) started occasionally getting in whole bone in pork loins that had been machine cut, and they looked like absolute trash.

We usually do this when we're having steaks for the whole extended family. Go buy a whole beef tenderloin, and cut them into filet at whatever thickness everyone wants. Most of the ladies want a petite filet and we'll cut those off of the ends, and leave larger pieces for the men and teenage boys.

Yup, especially getting Standing Rib Roast (ribeyes) at the holidays. Publix sells choice standing rib roast for about $7.99 at the holidays. Their Ribeyes are usually on sale at the same time for at least $12.99.

Will buy a 10lb or so and cut my steaks outta it...

our local W-M had whole loin pretty cheap but I can't get over the dry tasteless qualities. How do you cook it so that it's edible?

I'll buy whole at Costco and wet age the whole pack for 30-45 days. Save a few bucks and it's ready to age. Win-win.
