Wrong guy and wrong restaurant. It was Deanie’s. It’s was in ‘09 when everyone was jumping on all things NOLA because of the Super Bowl.

We went to the first wrestlemania in Nola a few years ago. We were sitting in the champions square area while waiting for the doors to open and this little Asian guy can and set behind us. Shortly we hear this awful loud chewing and crunching noise. Turned to look and he had a take out tray of crawfish and was eating them whole! My buddy that was with me angled around were he could see it better and the guy ate claws and all. Only thought was, those are going to be rough coming out the next day.

Richard Collins (The Underground Gourmet) popularized eating the whole BBQ shrimp at Manales, I've tried it on a few, let's just say it provided a bit more roughage than my system could handle.
I had a crawfish boil for a shipyard and one of the welders ate the whole crawfish, pretty astounding.
Warren Leruth made what he called shrimp butter. He pulverized cooked shrimp shells with butter and it was a very tasty seasoning on seafood dishes.
