Thinking about doing the tuna in the sous vide at 110 degrees for an hour. I normally would sear it for around 40 seconds on each side but thinking about not searing it all and making tacos. Good idea or I should sear it?

I like sous vide salmon
I've never tried nor plan on using sous vide for tuna
tuna is just too good as simple quick and hot sear
sometimes you don't need to mess with simplicity

Whats your recommendation on sous vide salmon? Temp and how do you season it before you vacuum seal

sous vide is for cooking dry, low fat meats to preserve moisture, or to perfectly cook a steak that you will seer afterwards. There is absolutely zero reasons to do this to tuna that you will seer for literally one minute per side.
Hint: not everything needs to be sous vide. that's just trendy bullshite

Some fish can benefit, but not fish that's best eaten raw or very briefly seared. All ahi needs is cracked peppercorns, a scorching hot piece of cast iron, a little oil, and two minutes.

I could see Sous Vide for making "tuna salad" type of tuna also. I agree mostly unnecessary, but I could see cooking it to the perfect temp being easier sous vide.

Planning on trying sous vide tuna soon. The future wife doesn't like raw or rare fish so I'm hoping sous vide will get it to her texture preference. Going to sous vide at 117 for an hour. For mine I'll probably skip the sous vide and just sear.
Roberts has tuna steaks for $6/lb so not too much of a loss if it doesn't come out perfect.
