1lb of cooked chicken diced real fine, either boiled, baked, rotisserie or out the can.

6 boiled eggs, separate yolks and whites, dice whites fine and add them to diced chicken and mix

1 cup mayo, put it in a bowl and beat it till smooth then add egg yolks

1 TBS yellow mustard add to mayo and stir

3 TBS Dill relish (optional) add to mayo

Salt, pepper, garlic powder, celery seed, onion powder to taste (all optional) add to mayo

Pour mayo mixture over chicken and mix well

Adjust seasoning to taste.

Some people add in diced celery or apples but I don't.

Similar to CHEDBALLZ except 3 eggs to #1 of chicken

Chicken
Boiled eggs whites
Onion, diced fine
Celery, diced fine

Boiled egg yolks
Mayonnaise
Dijon mustard
Tabasco
Rice wine vinegar
Lea & Perrins
Salt
Black pepper

Shred the chicken, halve the eggs & separate the white & yolks. Dice egg whites, celery, onion & add to chicken.

For the dressing, In a separate bowl, use a fork or whisk to smash & blend egg yolks with vinegar & salt. Do this until very smooth, no lumps or grainy egg yolk pieces.

Add mayo, mustard, Tabasco, Lea & Perrins, & blend until smooth. Taste & adjust flavor.

Add salt & pepper, taste & adjust. Should be a little on the salty side.

Fold chicken, egg whites, celery, & onion into dressing. Taste & adjust seasoning.

10lbs bone in chicken
2 yellow onions
1 bunch green onions
Dozen eggs
4 cloves garlic minced
Salt in pepper to taste

Boil chicken in seasoned water until tender. Debone and pick chicken clean. Boil eggs. Break out food processor. Process in this order. Chicken, onion, then eggs last. They will remove seasoning stuck to sides. Mix dry then add mayo until consistency you are looking for. Get a fresh loaf of Evangeline maid bread and sprinkle a little celery salt on it.

Here's a thread I started a few weeks back asking for advice on smoking chicken for chicken salad. It has a couple tips.

I add mayo, Major Gray's Mango Chutney, hot curry powder, raisins, celery, cashews, and salt.

All to taste.

This is the old DH Holmes recipe my mom always made:

4-5cups cooked chicken, cut in large pieces
2 stalks celery coarsely chopped
2 green onions finely chopped
1 tablespoon fresh parsley
1 apple peeled and finely chopped
1/2 cup mayonnaise
1 teaspoon curry powder
salt and black pepper to taste
Lemon juice to taste

Combine chicken, celery, onions, parsley and apples - toss gently.
In a separate mixing cup, combine mayonnaise and curry powder - blend well
Pour over salad and toss.
Add salt, pepper & lemon juice to taste.
Toss again, chill and serve.

1 block cream cheese
4-5 eggs
1-2 large chicken breasts, finely chopped (smoked chicken is even better
pickles (lots of pickles)
good squirt of brown mustard
salt, pepper, and a few dashes of Worcestershire Sauce

Pro tip- Instead of separating the white from the yolks, run them through a grater. Gives you small, managable egg white pieces and the yolks will get creamy as you stir the mixture.
