Fellas, I am in the process of moving and I have my recipes packed away in storage. I need to make a jambalaya next weekend and its been a while. I have a 5 gallon pot and need the quanities for everything again. I don't need what meat's to use etc. just the amount's of everything. Rice and water amounts included. Thanks for your help, Just wanna make sure I got the number's correct.

Should be 6 pounds of rice for a 5 gallon pot if you want it filled to about 90% capacity

1 quart of water per pound of rice so 1.5 gallons of water, rule of thumb you can use on the fly is 1 pound of meat you want(chicken, sausage, pork) per pound of rice. So 6 pounds of chicken and 6 pounds of sausage

Wait, you confused me just now. 1:1 lb of meat per lb. of rice. Didn't you mean 3 lbs of chicken and 3 lbs of sausage?

No, it's 1:1 for both...just a rule of thumb when on the fly

From the calculator, for a 5 gallon pot, 90% full -

5 3/4 pounds rice vs your 6 pounds rice
7.2 quarts liquid vs your 6 quarts water
14.4 pounds meat vs your 12 pounds meat

Your rule of thumb is not far off IMHO.

Jambo cook-off is a little more realistic and not that hard to pull off, I'd bet there would be a good showing...could probably tie it in with one of those official TD tailgates

It will pretty much be a competition to see who can use the jambalaya calculator and make poche's jambalaya the best.
