Circling back to the original question of editors. I use Edius, but there are some free or low cost editors available. Look for Openshot, Olive, and Shotcut. HitFilm Express starts free, but you can buy low cost add-ons for more functionality.

Crappy echoey sound can ruin the whole thing!! Record in a room with as much sound absorbing material as possible. If you recording ONLY the instructor's voice, I highly recommend doing it in a carpeted closet with lots of clothes.

No love for Davinci Resolve? It is probably the best editing software and is FREE!

Plenty of love here. Yes its free but to say its the best is subjective. It does some things better than others and other things not so much. To produce a professional quality video, it and Premiere Pro are the 2 major options (sorry OpenShot guys, they just are). If cost is a major factor, go with Resolve and you'll be just fine. If you can swing the modest subscription, go with PPro and get access to the other Adobe apps that any business would use.
Regardless, there is a learning curve for both.

I tried it. But the learning curve was steep. If I had the time to invest I would definitely go for that program.

These are all things that ANY business could use and benefit from. I use PPro exactly for that reason. Its very affordable for a business and can be written off as an operating expense.
And OP didn't ask for a "beginner" solution. They asked for "professional", "user friendly", and "self-taught". Beginner products don't give professional results and professional products require some learning. Resolve and PPro operate much the same way as far as how the video is edited. If cost must be kept to an absolute minimum, sure, Resolve is great and will meet all OP's requirements. If a business can swing an extra tank of gas per month, PPro also meets all the requirements plus the additional business-related apps. They really can't go wrong either way but a business makes decisions differently than an everyday hobbyist.

A new iPhone 11 or 12 pro cell phone with a wireless mic solution like Rode Wireless Go, tripod, and go on Amazon and spent about $150 on lighting would probably be fine.
(I’ve gotten by with a phone, DJI Osmo Pocket and Osmo action for making videos at my work and you can barely tell the difference to the professional crews we hire for our bigger commercials)
Editing wise, I don’t think anyone has mentioned LUMAFUSION (iOS only) .... but it’s a fantastic product, easier and more intuitive to learn than the others mentioned and you can edit everything by hand on an iPad. Plus if you only shoot in mp4 files, you can probably direct transfer then files over via Bluetooth and create a much easier workflow that saves a lot of time and hassle.
I use an iPad Pro and edit everything from interviews at work to weddings I shoot on the side with it.
Newer equipment that won’t break the bank but give a good pro look:
DJI Osmo Pocket 2 w/ pro kit, I just upgraded to it and the wireless mic that comes with it is fantastic and the sensor is much better than the OP1.
Sony ZV-1 camera. It is a point and shoot but video centric and is a pretty solid product for under $700

OP - do yourself a favor and Download Divinci Resolve and get started. Let the Adobe guy continue to pay for overpriced software.
