Toups Meatery guy making a C&G gumbo

LINK

Few points

1. He doesn't brown his sausage. Not horrible, but odd to me.

2. He adds beer between his trinity and his stock. Again, not horrible but odd.

3. At the end, he says, "leave it on the stove overnight". Always taught as a big no no to me.

Otherwise, seems like a pretty standard gumbo.

No way he does that at Toups Meatery.

I've seen the video prior, fun to watch.

I do this for chicken/duck and sausage gumbo, but never for a seafood gumbo.

Isaac Toups is pretty awesome.

Also, gumbo really doesn't need to be anything other than standard and basic. Although I do like Donald Link's Fried Chicken Gumbo Recipe!

Making the roux with the chicken grease makes such a difference.

The chicken grease is the leftover of frying chicken pieces?

I sort of roughly follow this Donald Link recipe. You fry/brown the chicken in some oil and then use that oil to start making the roux.

I always leave mine out all night. Hell, my pot is still warm in the morning.
