What's a good vegetable side dish to go with chicken enchiladas?

was invited by a nice woman to dinner and she asked me to bring a veggie dish..no idea what to bring. any suggstions?

Maybe black bean & corn salsa? Or some other dish with black beans.

I was thinking the corn and black bean salad too. I think the stuff is a waste of good stomach space, but it fits.

I work in Veracruz, Mexico frequently and they eat grilled veggies on the side just like is common in the states (zuccini, squash, onions, garlic). Sounds kind if boring to me though.

Try this: Buy fresh corn from a good local market, fold the husks back and remove the silk. Soak the husk part in water. Grill the corn, smother in butter and season generously with sea salt , cracked pepper and a light dusting of chili powder and paprika and fresh lime juice. Wrap corn back in husks and grill a little longer then stack in a baking pan. You can warm through in an oven at her house. Wal-mart sells a mexican seasoning in the fresh veggie section that has all the above in one handy shaker. It is orange-red powder and is very cheap. I prefer to use my own mix and use real good sweet cream butter.
