What really makes end-grain boards more expensive is the time it takes to make them.
You have to size all the wood being used to be extremely uniform so they will glue up evenly as you assemble the board so no gaps appear in the final product.
It is much easier to glue up face grain wood to get large dimensioned boards. A 14 x 20 face grain board will only need 7 pieces of wood 2 inches wide by 20 inches long. The same board using end grain will need 70 pieces if using 2 inch squares as the material.
