You think he really wanted this to be the season 3 of the show? If so he's fallen way too off. Surely his team had him "coached" into doing this.

Possibly. I’ve read a few interviews where he and the co creator Alan yang talk about not wanting the show to get stale and setting the show up to by anthological if they wanted it to be
There was a long break between S1 and S2 because they wanted to find a different approach to the show to get excited about according to them so I could see a scenario where they wanted the show to move in this direction, even though I don’t really like the direction they want to go in
The show has been super experimental throughout its run, so this doesn’t really surprise me at all. They’ve done a few different perspective episodes that were excellent. I don’t think this is what I will enjoy as a full season, but this decision makes sense given what they already did

I think he 100% had no interest in doing a Season 3, at least not for several more years. All his comments after S2 were about how the show had reflected life in his 20s and he had nothing else to say about that time period; that any more Master of None would have to reflect the more mature life in his 30s...which he was only currently experiencing.
I think Netflix wanted to do something with Lena Waithe who is a massive critical darling (largely thanks to her role on Master of None), and they convinced Aziz to use Master of None to further her career.
