I think it's that everything he has is shellfish. Some people are allergic so he should maybe have an offering that isn't seafood. You could do some Boudin Balls; isn't that cajun?
More Appetizers like Pork Egg Rolls or Meat Pies - easy to carry and eat while moving around and talking - Based on the drinks, if this is a brunch going to be some people who probably shouldn't be driving home later in the afternoon - just saying

Good on ya for self-catering. It can be fun to tackle that sort of thing every once in a while. I’d be a tiny bit concerned about a traffic jam in your kitchen. If you’ve got appetizer type things on the kitchen island, people will cluster there...and others will be trying to get to the gumbo on the stove.
Why not set up your appetizer station away from the kitchen, closer to the bar? Or break up the apps into 2 clusters, one inside near the seafood and another inside near the bar? Traffic flow is as important as menu, to me. 80 ppl is quite a crowd in all but the largest houses.

He shared photos of his gorgeous-is-an-understatement home on the HG board so probably good on that part but I love your idea to break it up a little more
I would keep cold salads on the island but maybe add an extra station near the bar for things you can munch on like chips/salsa or one-bite type things like pinwheels or canapes. When I entertain I have main areas but also little munchies all around (even if it's nuts or chex mix).

Going with jambalaya--it's just too good not to fix it and to try and mix in mexican food with this menu.

Please don't put the boiled shrimp in an ice chest, they will turn to mush and be impossible to peel. It is better to put them over ice and serve cold.
I cry when I sea boiled seafood steaming in an ice chest.
