And last week many people argued that LSU makes $15-20 per person on WBB concessions.

If you buy from Aramark you support Aramark

I think the contract runs through 2027 with the option to extend it to 2037. Sucks that they'll be in control for a while yet.

I’d like to give some background information that is relevant to concessions discussion. I am in no way advocating for anything, just thought it would be good for more people to know.
1) When the RFP was put out for concessions, there were only 2 bids for the contract - Aramark and Levy. That’s it - the department had to pick from one or the other as no other bids were submitted.
2) The contract is for 10 years, as will likely be the next one. LSU requires a huge capital expenditure on the part of the concessions vendor, and no one will invest in the upfront costs if the contract is shorter.
3) LSU, specifically the Athletic Department, is paid a percentage of the gross receipts, and that percentage goes up with higher volume.

We have some of the best tailgating in the nation. Who actually eats in the stadium? All I need is a coke for my bourbon

LSU should be known nationally for the best concessions around. This state revolves around and prides itself on its food.
Gumbo, jambalaya, etc. are literally made to be served in huge quantities and large batches.
Baseball could serve crawfish at certain games.
Yet we’re stuck with cold arse hot dogs served with a shitty attitude

quote:Those are basically the only two large-scale vendors in the country. Virtually every school that doesn't do it in-house uses one or the other. They also run campus dining at many universities, which is much more valuable than athletics concessions. Do you know if Aramark has that contract at LSU?

quote:See above. That's why Levy and Aramark bought up all their competitors.

quote:As is virtually every school who deals with these vendors (meaning virtually every school). Volume of what? Total sales? Specific sports? Specific high-margin items?

None of that explains why our concessions quality and service suck compared to most schools who use Aramark and Levy. What it boils down to is the quality of local workers they have access to and are willing to pay for. Ohio State uses Aramark, probably has the same deal LSU does, and it's at 10× better concessions experience.

I wasn’t attempting to explain anything, just giving background that a lot of people don’t know. I don’t have a dog in the fight, I just hear people complaining who don’t seem to understand the basic considerations behind why the vendor is Aramark. I don’t eat concessions at stadiums/ballparks, I’ve never thought it was as good as what I cook while tailgating. I buy water, and that’s it.

This. With all the good food in Louisiana, I can wait a couple hours to get something decent.

You seem well-informed in the procurement part. Do you know any of the other specifics I asked about? Not trying to be a dick, just interested.

I would disagree that giving background facts is the definition of explaining why the results are deemed poor. I was providing context as to why the AD can’t simply fire Aramark and have some magical vendor that provides culinary trained chefs to prepare hot dogs for people who can’t wait 4 hours between meals.
I’ve been to every SEC football venue, and quite a few NFL venues, but I’ve never eaten at any of them, so I don’t have any knowledge base to compare it too. I’ve never heard anything but complaints about concessions food, regardless of where I have been. I suspect the logistics of distributing food throughout a stadium, combined with the fact that most of it is essentially gas station food, probably explains why most fans at most stadiums complain.

quote:Yeah, no one said that or expects that. Again, that's also the literal definition of "attempting to explain something". And it's a straw man.

quote:I don't even know how this is relevant. For all the context you provided, you left out even more. Aramark provides delicious, fresh food at many college venues, employing local workers at minimum wage. The question was why it's different at LSU.

Take one look at the people working for them. If you think you are going to get good service from those things, then you have never been to a Popeyes or any other fast food joint not named Chick-fil-a!

I met the Aramark rep one time at a local establishment in Baton Rouge. He was a loquacious fellow from up north. Without saying it, he said Baton Rouge was the most racist place he’s been to. Of course this was not too long after the Alton Sterling thing.
He said the Baton Rouge government wouldn’t even consider using Aramark because he was white. The government only wanted to do business with black people. He felt discriminated against because of his skin color.
I say all of this to tell you he was very receptive to my criticism of their product. He wanted to know what they were doing wrong and how they could improve.
Maybe you should reach out to Aramark and let them know your complaints instead of bringing it here.

They had some new stuff this weekend at the 3B side concourse concession and were actually cooking the food on site. The hamburger I had wasn't that bad, way better than the ones from earlier in the season.
