So I assume you are staying on Maui the whole trip.

Obviously a lot will depend on COVID restrictions.

Maui must do’s:

Road to Hana
Dinner at Mama’s Fish House
Sunrise at Haleakala (my wife hated this lol but it is a thing)
Snorkeling at the crater

Bike down the volcano. I hear that is great to do and your start above cloud level. Maui is more for relaxing on the beaches. If you want to sight see go to Honolulu

Also, each island has their online Covid restrictions.

We've been going to Maui for over 11 years now and have never done it. We're supposed to go next week, and my husband has finally agreed to do Haleakala. Well, they've reduced capacity and I can't get a sunrise reservation despite being online right at the time they release them.

Its expensive but worth every bit of it. We went in the evening and got the sunset overlooking the cliffs and the ocean. It was awesome. OP definitely do some kind of excursion with snorkeling involved. Beautiful reefs and fish to see. Have fun and hope the covid restrictions aren't too bad

What did she hate about it? I have doubts the long drive and early wake up are worth the effort.

Snorkeling at the crater

Expanding (Maui only):
-Obviously, go to a luau. (Covid permitting)
-Our crater snorkel included swimming w/ sea turtles. We got lucky and saw whales on the run back to the marina. (You don’t necessarily need a separate excursion for each).
-Snowcones/smoothies at overlook on road to Pe’ahi. Watch surfers, hop the fence and walk down to surfer’s memorial.
-Road to Hana: Just advising a FULL day for this. Don’t buy your banana bread until Halfway to Hana.
-Food trucks: Saw this mentioned. Seek out the tuna poke bowl truck like the tree of life.
-Mama’s: Best fish I’ve ever had. Try to time your reservation to get some pics at sunset - it was too dark for good pics by the time we tried.

Traffic should be lighter amidst Covid, but allot for driving time. If you need more suggestions, I can try and dig up my old Maui post.
