I understood the reason my patches take so long is because of the download not the install right?

Not because of the download. It’s during the install because when the patch is being copied currently they have to rewrite over the entire file. With the new SSD it will just insert the patch where it belongs in the file versus having to rewrite the whole thing,

To an extent...but Playstation does this thing where it downloads the update file, then "copies" it. That part takes the longest and from what I understand the system is copying and replacing the install with new stuff.

That might not be perfectly explained, but it's a doofus thing Playstation does. Another doofus thing it does is fail to autodownload updates. It was one of the things it was supposed to do well and continues to fail at it.
