I much prefer Spanish Chorizo to Mexican Chorizo. They really aren't the same product though.
Mexican Chorizo is soft like Italian Sausage and must be cooked.
Spanish Chorizo is cured, firm, like Pepperoni or Salami, and ready to eat.
