But they also flattened their curves a while ago, so any new case is immediately taken seriously. People who test positive are backtraced in terms of who they came in contact with. Those people are tested. And the disease is isolated that way so that restaurants, businesses, and schools can function normally.

You would have to get tested over and over again to be sure you hadnt caught it since the last test, unless you are isolating yourself, in which case you don't need to get tested.

Where am I wrong?

Unless you are completely isolated, you won't be able to definitively know you aren't around someone who has the virus, so you'd have to get tested over and over again to be sure you don't have it.
