Breaded Cutlet/Country Fried Steak

This dish has gone to shite in every place I have tried it in the last 2 years. I guess the only way these days to get the breading to stick to the meat these days is to buy the "fritter" from Sysco or someone. Even some of the better "lunch type" places screw this up. Dempseys(pre Covid), Franks, and today the place at Oneal and George Oneal are bad. Today I ate the meat, then the breading which had all slipped off with the temp on the plate. Give me somewhere else to try please.

Fresh cutlet is expensive right now. We were serving 5.3 Akaushi cutlet hand breaded but when it went to 9 bucks a pound I decided to pull it from the menu.

I’ve never had the one at Beausoleil (only served at lunch), but the menu says it’s a flat iron steak.
It’s a tier or two nicer than the normal plate lunch spots though, so it’s $15.

If you ever want to do it at home it’s fairly easy. I get some veal cutlets at the store. Pound them to make them tender. Seasoning them then dip them in egg then flour and fry. Then I pour out most of the oil (keep the crumbs) then I make my milk gravy with that.

Ever ordered one at chilis? They used to make an excellent, huge CFS. Not sure if it's still on the menu as I haven't been there in years.

Yes! They had a great chicken fried steak. They changed the menu around and it's not on there anymore. That was my go to thing to get from there. Since they've changed it, I haven't gotten anything from them. Sucks because it was pretty darn good.

If you go to their website's home page and navigate to the menu from there, they only have the charred flat iron steak on the lunch menu.
If you Google Beausoleil and click on "menus" from the Google page without going to the website homepage, the chicken fried one is there. I always skip visiting the home page when I can.

I came to love the CFS from the Wednesday specials at Dempsey’s in Jefferson, I think in my memory it stands up to some of the places in Texas that I’ve tried.

Surprised that Twin Peaks had a pretty good CFS. Very thin and huge.

I remember theirs being pretty good too but our Piccadilly closed a while ago. All we seem to get here are stupid fast food places. I heard it was going to come back but who knows when. I miss their mac and cheese!

Doe's Eat Place has a decent CFS on the lunch menu.
