Is Hughes Net my best option or is there anything else? We want to cut out direct TV but live in the country. I'm not sure how much to trust the online reviews that I have found.

How far into the country are we talking? Are you sure there are absolutely no cable or dsl providers? How is cell service? You might be able to get LTE service for home internet.
There are also wireless ISPs called WISPs or fixed wireless in some areas. Might want to look into that.

Can you get some kinda jet pack or hot spot through your cell carrier. Satellite internet blows

Hughes net, WildBlue, all of them are terrible. The latency is horrible, the price is high, datacaps during peak periods, overall the very worst and last option.

I would just hotspot my phone before I would do satellite internet.

I would move before I got satellite internet. Seriously.

I'd try other options before having to resort to satellite regardless of satellite provider

Second the ATT fixed Wireless, got it done for my parents and it is pretty good and affordable.

First thing to do is search for fixed wireless. They probably have more people than you think running something near you. I use cajun broadband around Lafayette and have absolutely no complaints. Next best thing is looking into 4g unlimited hotspot. LINK I recommend unlimitedville, know someone using it and it works well.
Edit: satellite internet should be your VERY last option, at least until Starlink comes out next year.
