Same. 8lb bone-in. Slight injection and heavy dry rub yesterday. Had smoker going at 430. Been adding wood, drinking beer, and scoping TD.

It's still 30 degrees here; I'm not smoking shite. I am going to buy a Weber MasterTouch kettle this week though and try smoking either ribs or pork butt next weekend when it should get toward mid 50s. It will be my first time smoking.

I score all my butts fat cap up in pans to render and pull with the juice when done.
Scoring the fat cap also makes tasty treats I call pork butt burnt ends.
