I'm not stepping foot in France.
We are 3 guys that aren't going to visit the museums in London so we are ok take a day to go visit Amsterdam or Dublin. If we go to Dublin, we're drinking. If we go to Amsterdam, we're drinking/smoking/red light...
We're leaning towards Amsterdam via air rather than train.

I'm not sure how much time you will save by flying. London airports are a cluster and you'll need to get there at least a couple of hours before your flight to get through security. Same with Schipol. All Euro airports take longer to get through security and checkin than US airports. And getting to London airports can take an hour or more. Eurostar has direct high speed trains to Amsterdam that take 3 hours 40 minutes. St Pancras station in London is close in and the Amsterdam station is almost walking distance to the main area of town.

There's no train to Dublin right? I mean I don't think there is but I don't want to make an assumption...
Amsterdam day trip from London? WTF man, coming from a guy that went to Oktoberfest for his honeymoon that is just dumb.
If you want to do Amsterdam, fly in or out of there. Train or fly there from London, spend a day, then fly home. You sure as hell shouldn't fly there and go back to London.
Get out of the big cities. Seriously, there's plenty to do for young guys in England or the UK.
Dublin wouldn't be the worst place to fly home from either, do as I said above and fly there your last day and spend the day then fly home. If you are going to do anything, I'd do that.

You're being ridiculous on France but whatever. Whatever your complaint is probably applies equally or more so to the Dutch.
I've done London to Amsterdam via air, but I'd probably choose the train if I did it again. Air is fine if everything goes well, but it's much easier to travel in and out of St. Pancras. You can drink on either and the train is just more comfortable IMO.
