Deer are used to smoke. It doesn't bother them.

As for human scent, if you could afford to put a tide washed shirt you wore under your stand every week of the year, they would get used to your scent and none would ever be afraid to come out with you in the stand. They seldom smell humans so it's natural for them to be weary.
