re: Cracking egg in the gumbo

Great grandmother used to do it all the time. She made gumbo during lent a bunch and would put shrimp and the eggs.

When it was ready she would get the water boiling again and crack the egg right in the boil.... Look like oysters, taste like eggs.

So, yeh I like it.
