Cracking egg in the gumbo

This blew my wife's mind the first time she saw me do this. I love to crack a few eggs in the gumbo. Anybody else do this?
FTR: Once you are finished cooking, right before serving and the stove is off, crack eggs in and cover the lid, do not stir.

I grew up on eggs in gumbo--but they were usually hardboiled, peeled, and dropped into the pot just before serving. It's a common rural trick to up the protein content and "stretch" the pot to feed a max amount of people. Most folks who keep backyard chickens are always looking for ways to use eggs.
My favorite thing to add hardboiled eggs to: crawfish etouffee. The egg whites soak up the color & flavor of the crawfish fat, the yolks get creamy and delicious. Heck, the egg cooked in the gravy is almost more tasty than the crawfish.

Hard-boiled eggs in shrimp gumbo? Absolutely. Chicken and sausage? Nah.

I always drop some eggs in a crawfish or after boil stew but never in a gumbo

Great grandmother used to do it all the time. She made gumbo during lent a bunch and would put shrimp and the eggs.
When it was ready she would get the water boiling again and crack the egg right in the boil.... Look like oysters, taste like eggs.
So, yeh I like it.

That’s stupid. The whole point of boiling an egg in gumbo (much like a potato) is to absorb excess salt when one accidentally overseasons the pot. It’s also a cheap way to add protein.

Never, ever heard of eggs being used to "absorb salt" from an overseasoned dish. Doesn't seem like it would work.

As long as you have some tomatoes in the gumbo then I don’t see the problem with an egg or two.

I've heard of it being a prairie cajun thing... A few years ago a neighbor turned me onto hard boiled eggs in gumbo...pretty damn solid
