Vietnam vs Japan vs China trip

Any insight?
Wife and I been saving up a couple years to spend a couple weeks in Asia. Trying to figure out where to spend most of our time, and we (think) we’ve narrowed it down to Vietnam, Japan, and/or China.
Right now I’m leaning toward maybe a quick stop in Japan for a couple days at the end for some amazing food and stuff, but I’m really feeling like it’s be a blast to go into “deep” China or Vietnam. I.e. get away from the big cities and go way off the beaten path for a week or 2. Is this crazy/stupid?

FYI-if you want to go "deep" in Japan you can do that too. Just head into the countryside . The "real" Japan. That's if you prefer a first world vacation. The islands of Kyushu and Shikoku can be much cheaper as well. It will likely wow you. Allow me to gush by saying that Japan (like France to Europe) is a civilizational triumph.
Choosing between Vietnam and China is easy for me. I'm not a China guy because the people aren't as awesome as the Japanese or Vietnamese. I'd take Vietnam all the way between those two. As for it being "stupid" to get off the beaten path, HELL NO it's not stupid, it's frickin brilliant. A couple weeks wandering around rural Asia would be the best time of your life.
Also consider Chiang Mai Thailand. If you and your wife prefer the comforts of the First World, go to Japan. If you want a little more Wild Asia-go to SE Asia.

If this isn't the damn truth.
My vote is for Japan as well.

Thanks
We’re definitely OK and almost looking for something non-first world for this trip. Want to get slightly outside of our comfort zone. Was thinking it’d be cool to go way off the beaten path and see what happens and then spend the last couple of days in Japan doing the exact opposite and enjoying all the amazing, decidedly advanced stuff it has to offer.
The worst part about traveling is making a decision and excluding a place. When I had the time to travel, I didn’t have the money. Now that I have the money, I don’t have the time. Life is cruel

I’d recommend Thailand or Vietnam then. Both are very cheap , very scenic, GREAT GREAT people, great food, great mountains and beaches. Somebody did a great Cambodia thread not long ago as well. I’d suggest Chiang Mai Thailand again. Mrs Pimp’s home town in Vietnam is 150 km from Phnom Penh so I have my eyes on that. I also really want to check out Malaysia.

Agree with Pimp but suggest considering a stop in Cambodia if it fits your plans.
I like the more challenging places myself and that sounds like you so that's what you should do.

Mentioned it to the other guy heading toward China beach
China is cool but would start with big cities
Beijing
I have been deep into the countryside for business and all nice but an effort to organize
You would have more fun in Thailand and they are geared for lots of tourist .....still good tourist but a little less structured thus more adventure look seriously at Vietnam
Guy who said Malaysia ... idk I was in oil so probably did not get to the places you are looking at but it was pretty rough and poor most people had to work an assignment there to get to other places in the area and were happy to leave
Never been on Japan except airport and if you want to let them have Okinawa (which is great)

Already been covered but I suppose I’ll voice my support and reiterate;
If you primarily want off the beaten path, and away from massive cities (most of the time) definitely Vietnam / SE Asia.
If you’re cool with just having that aspect be a smaller (time wise) part of your trip, then Japan could offer you that opportunity as well, I’m just not sure to what extent. It’s pretty modern / industrialized and transport throughout the country is very good. You wouldn’t really be “roughing” it or get the same sense of exploration.
If I were you, I’d totally go for Vietnam / SE Asia. Vietnam is a wild, interesting place and you could probably squeeze in a few days in some of the surrounding countries as well.
Just don’t step on a land mine. ;)

just returned from 6 months working in SE Asia. Was able to travel for 6 weeks after my job ended. Was primarily working in Chiang Mai .
Vietnam is simply amazing and has everything ... my clear favorite
Cambodia .. Siem Reap for the temples is a must and Kampot is a chill escape
Thailand .... very westernized and loads of travellers, but still a magical place
people are friendly across the region and of course the sites/food
