The game is on ESPN2, so I suspect they set the tip time. LSU probably didn't want the game during the afternoon (because of baseball) and ESPN2 didn't want the LSU/Tenn. at 7:00.
Assuming both teams continue to play well, I suspect ESPN would love to move the game. Unfortunately, I don't think there's as much flexibility in start times as their is with football

Then after the game at 11am, baseball at 3pm, THEN if you’re a giant fan, cruise down I-10 to Nola for the Pels v. LeBrakers.

If the two teams keep winning ESPN could very well have gameday in the PMAC leading right up to the game.
