Prior unanswered question:

Rob, any value in smoking beef ribs with the bones cut? Seems like when I goto Costco they cut the damn bones individually. Maybe for weight? I think its better to smoke the rack. What say you?

Better whole for sure. You want the biggest piece of meat you can or you may dry it out. WTH is wrong with Cosco?

Didn’t you used to do pop ups long ago? Did you make any money at all doing these or was it just to get your name out there for bigger things to come? I’ve thought about doing the pop up thing, but don’t know if there is an end game for me. Thanks.

Pop ups were the MOST profitable because of little overhead. I love the new Social Media Chefs in NOLA selling plates out of their houses! Thats AWESOME!

Speaking of pop ups wortking out of your house, ever hear of Gonzo’s smokehouse BBQ? They look like they are putting out some effort to make some good stuff.

I gifted them my Instagram account of 10,000 bbq followers when I left town. Tring to help a lil guy trying to make it like I was before. Glad they are doing well!

Your Ave Pub ones were awesome. Also digged the one at PJ’s. Was cool walking in the side gate and around back to get a box of meat.

Did/do you smoke short ribs? How do you like to season them? Just S&P or did you use a special rub?
