Burying a pig to roast

Anyone ever do this ? Saw it on tv before what's the proper way to get it done.

Because of reasons already stated and the type of soil I had in my backyard I looked up alternatives. I used 48 cinderblocks, 2 sheets of diamond cut stainless steel and 1 sheet of stainless for the bottom. I think I used a 4x8 for both.
Stagger stack the cinderblocks in a rectangle over the solid sheet of stainless. Use aluminum foil and drape all 4 sides of the inside chamber. Take the pig after being marinated and wrap it in banana leaf. lay it flat on the diamond cut sheet and sandwich with 2nd grate over the pig. Use metal clothing hangers to twist tie across the entire platform real tight especially on edges. Using the metal clothing hangers make 2 handles on each end for flipping.
Use one huge bag of charcoal placed in the middle of rectangle. When ashed over using a shovel spread to all four corners. Lay pig on top of cinderblocks cover with aluminum foil across the entire pig and grate. Then using burlap bags that have been soaking in water, lay on top of aluminum foil. Every so often throw water on burlap to keep the burlap bags wet throughout the cook.
Continue to add charcoal to all four corners by sliding out one cinder block and throw to each corner. Put cinder block back. Cook all day and flip pig halfway through. This was my version of a pig roast for a luau I did years ago.
Found this idea online. I modified it a little but the idea was based off of some Cuban guys in Miami, forgot the name of the website (3 Cuban pigs???)

We did this every year in college for my fraternity's "Luau" during rush week.
1. Kill pig.
2. Dig hole in the ground.
3. Start big arse fire. We used hickory since we had access to a bunch of it.
4. As the wood burns down, add in river rock. MAKE SURE THE ROCK IS DRY. Otherwise it can explode. Trust me here.
5. While coals are burning down, season pig with whatever.
6. Get a piece of chicken wire twice the size of the pig. Line with banana leaves if you can get them, otherwise we used cabbage.
7. Place pig on covered chicken wire, and carefully layer more cabbage/banana leaves around the pig as you wrap the wire over it. Secure the wire with ties so you have a tightly wrapped pig.
8. Drop pig in the pit on the coals. Layer on top with lots of wet burlap.
9. Cover burlap with a tarp (make sure it doesn't hang down and touch the coals).
10. Cover pig with dirt.
11. Drink beer.
12. ???
13. Profit and eat pig. We would let it go overnight and stay up all night drinking.

I've never lived in a place with a water table low enough to allow me to dig a hole & not have it immediately begin to fill with water!
It's a heck of a lot easier to just buy or borrow a "cajun" microwave, a/k/a caja de china box. Anywhere from $100 to $300, depending on size. Not as cheap as the cinderblock solution, but perhaps a bit more portable and less work.
